Porchetta [porˈketta] is a traditional street food of Italian culinary tradition. It originated in Lazio but is popular in the whole country. In Umbria they believe it was born in Norcia, a town which is famous since the Roman period for the raising of pigs while was introduced in the United States by Italian immigrants in the early 20th century.
Sold from a cart or a truck, it is a whole savory and fatty roasted pork with crispy skin with an unmistakable and unique flavor. The whole pig is gutted, deboned, and stuffed with liver, heart and other entrails mixed with salt, pepper, garlic and savory herbs usually rosemary, fennel or other herbs, often wild depending on the region.
The Umbrian Porchetta, for example, is stuffed with the pig’s chopped entrails mixed with lard, garlic, salt, pepper and wild fennel. Then it is rolled, spitted, and roasted, traditionally in a wood oven but now also in stainless steel ovens. It is sliced to order and served in a sandwich as a quick treat at a market or a fair or it can be a second course and is very popular to have it as a snack in local wineries.

Wine Link Italy in collaboration with Porchetta NYC, Porchettiamo Festival and Agriturismo Alla Madonna del Piatto is proud to introduce you to the world of this great dish in Umbria. For 4 nights and 5 days we will explore some of the off the beaten path hilltowns, wineries and eclectic cooks as well as spending the day at the Porchettiamo Festival in the medieval town of San Terenziano tasting various Porchetta stands, drinking Sagrantino wine, visiting wineries and an historic brewery in Perugia. The tour also includes a porchetta making workshop and cooking class with Letizia the owner of Alla Madonna del Piatto Cooking school.
We will dine and stroll exploring interesting Enotecas and simple Trattorias as well as pottery shops and a fabulous antique paper making atelier in the base of an ancient roman colosseum in the town of Bevagna. We will meet finest norcini and salumi makers and sample their products and experience Umbria that remains well off the beaten path for most tourists, travelers and general visitors. May in Umbria is a beautiful month, the fields are alive with wildflowers and colors, the sun is warm but not yet too hot and the days are long.

TERMS AND CONDITIONS
BOOKING AND CANCELLATION POLICY:
We accept credit card, international money transfer and PayPal payments. Paypal payments are subjected to a 3.5% administration fee. In any case, payments must cover the tour costs after bank fees for which we are not responsible.
A non-refundable booking deposit must be made to Alla Madonna del Piatto to secure reservation.
A second deposit must be paid to Wine Link Italy 60 days prior to the date of your visit.
Balance must be paid in cash within 24 hours from arrival.
Deposit and balance amounts will be determined before reservations depending on the tour’s final itinerary.
CANCELLATIONS AND REFUNDS:
Please note that you are dealing with small family companies. Cancellations are a serious difficulty for us particularly if occurring near the dates of the tour, we thank you for your understanding.
We strive to offer the best of Italian hospitality. However, should you have any issues at arrival or anytime during your stay, we need to be notified immediately. We can only assist you and help to resolve problems that are addressed during your stay. By notifying us during your stay, you will allow us to promptly address or remedy any items that you feel need attention.
We apologize but we cannot offer any reparations for any issues that are presented to us after you have checked out of Alla Madonna del Piatto.
The tour program might be changed and the order of activities altered due to weather or other unforeseeable circumstances.
The intial deposit is non-refundable. A 50% refund of the second deposit is possible 59 to 30 days before arrival date. No refund nor reapplication toward future trips is available for the second deposit from 30 days of arrival date. There will be no refunds for any unused portion of the tour.
No refunds will be provided for any non-refundable amounts paid unless the tour is canceled by us due to unforeseeable reasons.
We highly advise you to purchase travel insurance in the event of emergency, illness of yourself or your family, change in your itinerary, accident or act of God, which we are not responsible for covering.
The tour will run for a minimum of 4 participants, in the unlikely event of not reaching the minimum number of participants we will have to cancel the tour.
In this instance, we will not be held responsible for anything other than refunding the monies paid by the participants for the tour. Under no circumstances shall we be held responsible for any additional refunds of purchases made by the participants for travel related expenses, or otherwise.
HEALTH AND DIETARY REQUIREMENTS:
By booking the tour, the traveler certifies that he or she does not have any condition or disability that would impede the operation of the program or the welfare or enjoyment of fellow travelers.
Meals included in the program are based on a fixed menu reflecting the food of the region. If you have a specific dietary needs or allergies, please advise. We cannot however make guarantees for changes or modifications to all meals to accommodate special food needs. As food is abundant and varied it is generally not a problem to avoid allergy-inducing foods or those you do not like. However, it is essential to let us know about your specific needs at the time of booking.
